How to make Iraqi okra stew | مركَة بامية GB

In this recipe video I show you how to make okra stew - a classic Iraqi dish. It is sometimes served with bread, but normally with rice. This recipe makes around 4 servings. Ingredients: • one bag of frozen okra (defrost before using) • 4-5 tomatoes (blended), or 1 can of chopped tomatoes • 8-10 garlic cloves, whole • 1 tbsp of tomato paste • 2 tbsp oil (I used olive oil) • salt to taste Method: 1. Heat the oil in a pot and add the garlic cloves. Stir continuously, making sure that they don’t burn (a bit of browning is okay). Cook for 1 min before adding the okra. Stir gently, being careful not to over-stir so that the okra does not become mushy. Cover and allow to cook for 1 min. 2. Next, add around a 1/4 cup of hot water to the okra and garlic. Cover and let cook for around 3/4 mins. 3. Next, add the tomato paste and gently stir. Add the blended or chopped tomatoes, and gently stir. Season with salt. Loosely cover the pot, leaving it slightly ajar so some of the steam can escape, and allow to cook (still on high heat) 5 mins. 4. After the 5 mins, remove from heat (just so that the sauce doesn’t splash out), taste for seasoning and add a splash of water if needed. Put back on the heat, lowering to a low heat. Cover and allow to simmer for around 20 mins. 5. Serve with rice and a simple salad, if desired. Enjoy!
