In this vegetable fried rice recipe, the fresh produce were highlighter to be the star of the dish. It is a flavourful, vegetable forward vegetable fried rice recipe. I made an effort to avoid any ingredients and/or techniques that mask these fresh and natural flavours. The ratio of rice to vegetables ended up being 1:2, which renders this dish quite healthy in terms of the amount of carbs. The use of soy sauce was omitted in this beautiful vegetable fried rice recipe, because the flavours derived from caramelizing a select few of the fresh produce, were truly amplified. INGREDIENTS: * 2 Cups of basmati rice * 2 litters of water * 3 bay leaves * 12 cardamom pods * 4 grains of selim (may substitute with 1 cinnamon stick) * 1 star anise * 2 tablespoons extra virgin olive oil * 1 tablespoon of salt * the following ingredients are all 1/4 cup in quantity and finely chopped : scallions/spring onions, celery, red onions. *1/2 tablespoon fennel seeds * 1 sprig of fresh rosemary (leaves removed) * serrano chili * 1 tablespoon finely chopped ginger * 1/2 teaspoon finely chopped garlic * 1/2 teaspoon of freshly crushed black pepper * 1 tablespoon of ghee/ clarified butter * 1/2 tablespoon salt Vegetables: *The following ingedients are all 1/4 cup in quantity: shredded carrots, green peas, thinly sliced celery, snow peas, red and yellow miniature bell peppers thinly sliced, red onions sliced, scallions. first, water, dry aromatics (bay leaves, cardamom pods, grains of selim, star anise) salt, olive oil and let it come to a boil, and then add washed rice and cook for 6 mins. Then, strain rice, and spread on a sheet pan and allow to cool down, and air dry. Next, heat up your wok, and add ghee till melted, and add fennel seeds, and rosemary, serrano chili, 1 tablespoon finely chopped ginger, 1/2 teaspoon finely chopped garlic, 1/2 teaspoon of freshly, crushed black pepper, 1 tablespoon of ghee/ clarified butter, 1/2 tablespoon salt, and cook on high heat till caramelized, and add vegetables, and cook for 2 mins, still on high heat, and then add rice, and toss gently to avoid rice grains from breaking, and cook for 3 mins, and season with salt and black pepper as you taste and find that seasoning is required.
