”三角馏“其实是著名的海南风味小吃。这种以糯米粉、椰丝、姜汁、花生、红白糖制作而成的甜点(听说有咸的),因为是呈三角形关系,故得名“三角馏” 。三角馏的名字源于三角的形状,这三个角,在民间有着代表福、禄、寿的说法。但这个食谱是用沙葛作为馅料。
Traditional kueh in Hainanese we call it ‘三角馏’ San Jiao Liu that represents good fortune, prosperity and longevity.
Characteristics:
Skin: Made with sweet potatoes to maintain the chewiness and soft texture even after hours.
Filling: Sweet with a hint of saltiness. Can use shredded coconut paired with pandan, gula melaka, ginger, orange peel, peanuts and toasted sesame seeds. Here we used Bang Kuang as filling.
Ingredients 食材:
▶️ Skin dough 皮料
Potatoes 马铃薯 100g
Sugar 糖 1 tbsp
Glutinous Rice Flour 糯米粉 200g
Water 清水 100ml
Corn Oil 玉米油 40g
Purple Sweet Potato Powder 紫薯粉 1 tbsp
▶️ Bang Kuang Filling 沙葛馅料
- cooking oil 食油 50ml
- garlic 蒜米
- minced meat 肉碎 80g
- salt 盐 1/2 tsp
- Bang Kuang (Yam Bean) 沙葛/豆薯 400g
Remarks: Fry all the ingredients
