A recipe to make Grilled Chicken Drumstick, also known as Spicy Chicken Drumstick.
Ingredients:
Chicken Drumsticks - 9 ct.
For first-step marination:
Lemon Juice - 1 tsp
Turmeric Powder - 1/4 tsp
Salt to taste
For second-step marination:
Peppercorn - 1 1/2 tsp
Fennel Seed - 2 tsp
Cloves - 6-8 pcs.
Cinnamon - 2-3 thin slices
Cardamom - 1
Bay Leaf - 1
Mace flower - 1
Star anise - 3 petals
Nutmeg - 1 pinch (if you have whole nutmeg, take a little amount from it)
Dry fenugreek leaf - 1 tsp
Garlic - 4
Turmeric powder - 1/2 tsp
Coriander powder - 2 tsp
Kashmiri chili powder - 1 tsp
Yogurt - 5-10 tbsp if you need
Coconut oil
Directions:
1. Clean the drumstick and put some slits on it.
2. Marinate chicken drumstick with fresh lemon juice, turmeric powder and salt.
3. Heat a pan and roast all the whole masala. Once all of it is roasted, switch off the flame and add dry fenugreek leaf to it and grind all and make as a powder. Then add coriander, turmeric, and chili powder to it and grind it together. After that, add chopped ginger and garlic and grind it well.
4. Then add yogurt and salt to the ground masala and then grind it and make as a paste. If the mixture is still powdery, you can add more yogurt to make as a paste and put enough salt to it.
5. Marinate chicken with this masala.
6. Refrigerate marinated chicken to 4-5 hours or overnight. Cover the marinated chicken with a lid, otherwise it will get dry.
7. Whenever you're ready to grill chicken, apply little bit coconut or any other oil to it.
8. Heat the grill to 400F.
9. Once the grill is at 400F, put all the marinated chicken to it. Lower the flame to 350F and cook for 10-15 mins. Grill both sides of the chicken until done. Once its grilled, grilled chicken is ready to serve with chapati or rice.
